CHOCOLATE SUNDAE CUPCAKES

WHAT YOU WILL NEED:

CUP CAKE:

  • 6 paper baking cups
  • 1 cup cake pan
  • 6 maraschino cherries
  • Chocolate sundae syrup
  • 1 egg
  • 3 TBS cream cheese
  • 3 TBS butter
  • 3.5 TBS sugar
  • 1/8 TSP espresso or regular coffee, (Santa likes espresso!)
  • 1 TBS rum, (None for Santa; he's driving.)
  • 1/2 Cup all purpose flour
  • 1/2 TSP baking powder
  • 3 TBS milk

TOPPING:

  • 6 TBS cream cheese
  • 1/8 TSP espresso or regular coffee, (Santa likes espresso!)
  • 2 TBS plain yogart
  • 2 TBS sugar A sprinkle of powdered sugar

PREPARATION: CUP CAKE

Egg, butter, cream cheese and milk need to be at room temp for at least 30 minutes. All purpose flour and baking powder need be to sifted twice. Slightly oil cup cake pan. Preheat oven to 325 degrees F Whip cream cheese 10 seconds low speed and add butter continuing to mix 20 seconds. Next mix sugar and coffee, (espresso) then add to cream cheese mixture; mix low speed 2 minutes. Add egg continue mixing 1 minute or until creamy. All purpose flour and baking powder need be to sifted once more. Add milk and mix lightly with spatula then add all together.

Fill paper baking cups 2/3s of the way Bake at 325 for 20-25 minutes or until golden brown.

PREPARATION: TOPPING

Whip cream cheese until soft. Add plain yogurt, sugar and coffee, (espresso); mix low speed for one minute. After cup cakes are finished allow to cool then add topping with cherries, Chocolate sundae syrup and a sprinkle of powdered sugar.

That's it and it's sure to jump start Santa for the rest of the night.
